Ingredients
1 Small Pack of Boneless Chicken Thighs (cut into small pieces)
1 Whole Small Onion
2 Tablespoons of Garlic
1 Whole Tomato
1 Potato (cut into cubes)
1 Can of Garbanzo Beans
3 Tablespoons of KickN Curry Spice Blend
Cilantro
Spring Onion
2 Teaspoons of Salt
1 Teaspoon Black Pepper
3 Tablespoons of Olive Oil for cooking
Instructions
Season chicken thighs with the ½ onion, 1 tablespoon garlic, tomato, cilantro, spring onion, salt and black pepper and 2 tablespoons of kickn curry spice blend. Refrigerate to marinate for at least 3 hours.
After marinating take a large pot and pre-heat to medium heat. Take your olive oil and add to the pot. Once oil is hot add 1 tablespoon of kickn curry spice blend and remaining onion and garlic to sauté for 2 min.
Next, add marinated chicken to the pot and cook for 10 minutes before adding ¼ cup of water, cubed potatoes and garbanzo beans.
Then place lid on pot for chicken to cook further for about 20-25 minutes.
Lastly, serve to your guest with a plate of jasmine rice and enjoy!!!
